Theme for 2012: chilli pepper and extra virgin olive oil with Chef Enzo Grisolia of the Chilli Pepper Academy, and high pastry with extra virgin olive oil with Master Pastry Chef Salvatore De Rice and chef Davide Macchioni.

PROGRAMME

Sunday 25 march
  • 10.30: Chilli pepper in cuisine and pairings with extra virgin olive oil. Chilli pepper varieties and conservation techniques. Holy oil (extra virgin olive oil with chilli pepper).
  • 16.00: Baked tarts with extra virgin olive oil: Caprese with Amalfi lemon and Cocoa and Pear Tart.
Monday 26 March
  • 10.30: Spicy pairings: ricotta mousse with Pisticci pink figs, extra virgin olive oil and chilli pepper honey.
  • 16.00: Creams with extra virgin olive oil and shortbread: creamed Giffoni hazelnuts and extra virgin olive oil and shortbread biscuits with olive oil.
Tuesday 27 March
  • 10.30: No to salt, yes to chilli pepper and extra virgin olive oil: the Academy's chilli pepper varieties.
  • 16.00: The two trees of life - olive and chestnut: not only chestnut cake. Tart with chestnut oil, apples and honey.
Wednesday 28 March
  • 10.30: Spicy world: customs and uses in food culture around the world. Harissa sauce and Mexican sauce with Italian extra virgin olive oil.
  • 16.00: Modern spoon desserts with extra virgin olive oil: chocolate mousse with extra virgin olive oil.
